Quebec’s Unibroue brewery was established in 1990 and is one of the world’s foremost brewers of bottle-refermented, specialty beers. Master Brewer Paul Arnott from Chimay is known for producing some of the world’s best Trappist ales. True to tradition, he has rejuvenated the established brands and has also created the Éphémerè white ales made with Seasonal fruit and spices and Chambly Noire a black ale. The beers of Unibroue are brewed in the traditional method of bottle refermentation in which fresh yeast and pure sugar are added just prior to bottling. These beers are only partially filtered, leaving a satisfying mouthfeel and trace nutrients such as Vitamin B.
