Wine of the Week - Avalon 2008 Cabernet Sauvignon

Named after the Arthurian legend paradise, Avalon Winery focuses just on one grape, Cabernet Sauvignon. Their wines are flavorful and original, without breaking the bank.

The 2008 vintage was a challenging one with the odd spring frost and rain and as a result, the crops were a bit smaller than usual.  Winemaker Alex Cose took this as a challenge and was able to extract more color and flavor due to the higher skin contact to juice ratio. The grapes were cold soaked for two days prior to fermentation to preserve this intensity.

This wine has tones of cherries, boysenberries, chocolate and was aged in both French and American barrels for 18 months before bottling

Pairs best with burgers, roast beef, sausages, or on its own
